[Tech Debt] Airgap install procedure/script should use oc-mirror v2 as v1 is deprecated in OCP 4.18

      Description of problem:

      oc-mirror v1 has been deprecated in OCP 4.18. It is recommended to migrate to the v2 workflow. See GA of v1 and deprecation

      We need to migrate to oc-mirror v2 by (among other things - see link) :

      • ensuring that we always use `oc-mirror --v2 ...` (instead of just `oc-mirror ...`),
      • and ensuring that the API Version in the ImageSetConfiguration manifest is v2alpha1

      Note that the configuration file and the results directory might have changed.

      TODO

      • Operator: update the airgap script to make sure we are using v2. No change to the docs.
      • Helm Chart: Test and validate with oc-mirror v2, and then update (or create a follow-up issue for the Docs team to update) the procedures in the related docs Helm updates are mostly docs. So this can be handled as part of RHDHBUGS-2062
