Docs refer to old alpha2 API

      Description of problem:

      This doc (and possible others) refer to "The Red Hat Developer Hub operator exposes a rhdh.redhat.com/v1alpha2 API Version of its Custom Resource Definition (CRD)."

      Since in 1.4 we use the alpha3 API spec, we should update all the docs to refer to the current version.
