[SB] Downstream Docs - Update references to servicebinding.io/v1alpha3 with servicebinding.io/v1beta1

    Description

      This story requires updates to downstream docs. Replace all references to servicebinding.io/v1alpha3 with servicebinding.io/v1beta1.

      Mention in the Release Notes of SBO 1.2 about the support for servicebinding.io/v1beta1 resources.
      servicebinding.io is now GA.

      • Change TP to GA in the matrix table.
      • Remove references to Tech Preview (TP) content.
