It's possible to read:

"These low and high watermark values are Elasticsearch defaults in the current release. You can modify these values, but you also must apply any modifications to the alerts also. The alerts are based on these defaults."

The issue here is that it's not possible to modify the values for the alerts in the default alerts. This was discussed in BZ#1886346 created by me for OCP 4.6, but, it was not modified in the documentation.

You can see the discussion on it and where it's not possible to modify. Then, I'd suggest to change it for only this:

"These low and high watermark values are Elasticsearch defaults in the current release. The alerts are based on these defaults."
