We need to review all the v2 APIs and make sure that we are handling the empty vs unset field explicitly. Discussion in slack 

Acceptance Criteria:

• Common functionality should be written to be reusable or applied every time an empty field vs unset field value needs to be handled in the v2 API
• Implemented and tested for all the v2 APIs
• Document breaking changes and handle change management. 
• Review PR and Change management plan with the leads
