Add request/response mapper functionality to the Kessel access check SDK. The request/response mapper will be used to map different versions of the targeted API endpoint request and responses to the SDK React hook types. This will allow consumers to adapt the SDK to their specific API version requirements while maintaining type safety.

We will provide a default request/response mapper out of the box for the current API version.
