We want to track usage analytics for WebRCA UI. We already do this for InScope using Matomo. We should use our existing matomo server to track WebRCA UI since we can separate which website's analytics we are looking at in matomo.

The outcome of this ticket should be two things. First, a write up of options available with pros/cons. Second is sub-tasks based on what we decide from the write up.
