Kessel logs should be discoverable in Kibana

      At this time it doesn't seem that Kessel logs are showing in Kibana, which makes it challenging to diagnose issues (and correlations with other services, such as Notifications)

      Our logs should be browsable/searchable in Kibana for stage and prod
