We will start/initially use prometheus as its supported by Kratos: https://go-kratos.dev/en/docs/component/middleware/metrics

for both HTTP and gRPC - we need prometheus added/configured

For streaming endpoints we need this support as well

Can refer to spiceDB implementation of the same: for the streaming metrics.
