oc-mirror should support a sliding window as e.g. latest - x versions

oc-mirror should support a sliding window thus the ImageSetConfiguration files are easier to maintain. This would be beneficial, if you are not interested in dedicated version tracking and are required to mirror the operator content for disconnected environments.
