[Quay] Configuration validation and documentation

2. What is the nature and description of the request?

Customer request:

1. The complete documentation of ALL config fields and their defaults (for each Quay version) and also their optional values.
2.  A means to automatically validate a config.yaml. This should preferably be a JSON/YAML Validation (e.g. https://json-schema-everywhere.github.io/yaml ).
3. An API-Endpoint to submit a config.yaml and get feedback on the validity of the submitted file.

Operational Stability, Traceability of Configuration in Production (Default Values that change with new Versions)
