Epic Goal*
As a user mirroring operators, I want to be able to tell what versions of each operator has been mirrored
Why is this important? (mandatory)
Currently when operators are mirrored there is no way for a user to tell what version of the operator was mirrored from the tool itself. Without putting the previously mirrored version into the imageset config, simply running oc mirror again will mirror the latest version with no guarantee there is a path to upgrade.
Even if the tool can understand

- User mirrors the ansible automation platform operator today
- in 2 weeks the user wants to mirror the latest version using the initial version as the minVersion (starting point)
- There is no way for the user to know this information.
