Cluster Logging Operator: Create official tooling or a guide for data migration between ElasticSearch and Loki

2. What is the nature and description of the request?

For safe migration from ElasticSearch to Loki, we have the following KCS: https://access.redhat.com/articles/6991632

However, we should probably add this to our official documentation.
Also, the KCS only keeps the data in ES, but does not transfer the data to Loki.
We still need official documentation or tooling for how to transfer the data or at least show how it can be accessed after migration.

3. Why does the customer need this? (List the business requirements here)

Migration from ElasticSearch to Loki as we are deprecating ES.
Continuity in logging data, avoid loss of logging data around the time of migration.
