RESTEasy 6.1.0.Final was mistakenly released with jakarta.interceptor:jakarta.interceptor-api:2.1.0 when 2.1.0 was out which is much newer. Normally a big jump like this would not be done in a micro-release. However, it feels like we should do this so there is better Jakarta dependency alignment.
