Remove the Jakarta Transformer option for the galleon-feature-pack

The org.jboss.resteasy:galleon-feature-pack is currently configured to transform artifacts. This should be removed as all dependencies should already be using the Jakarta namespace. Note the server configured for testing currently still needs to be transformed for some cases.
