Add a `latest` directory to our document link

rsigal@redhat.com asoldano When I'm writing the resteasy-spring-boot document I need to point to our resteasy document section like this:

https://github.com/resteasy/resteasy-spring-boot/pull/72/files#diff-5276987e704120be848dc44ef69610e3R7

And I don't want to point to a specific version of our document soon because it will outdate.

Can we have a `latest` directory to be put here:

https://docs.jboss.org/resteasy/docs/

And it will always point to the latest version of the document.

I can take this if you can teach me the workflow
