Our tooling should support detecting and/or allowing users to select which Java version to use.
For example, when generating a project from code.quarkus.redhat.com it should be possible to select which java version to target so that the generated project references the correct java version. AFAIK the current references are in pom.xml and Dockerfile.jvm, but there might be other references as well.
When using command-line tooling it should default detect which java version is default on the user's environment but also allow the user to override it with a parameter.
