User Story:
As a PSAP Engineer I need to understand how to interact with the new Caitkit NLP Embeddings services that are going to be enabled in the RHOAI 2.11 release. By better understanding with this service looks like I'll be able to design some perf and scale testing to evaluate the new service being exposed.

Acceptance criteria:

• Being able to query the embeddings endpoint offered by RHOAI and understanding the options available.

• The main output of this card will be a test plan.
