The Red Hat Quay documentation for backup suggests that we need to scale the deployments to 0, meaning that we will have service unavailability during the backup period. 

Taking into account that there is a plan to simplify the read only configuration and that there is a read-only setup procedure, this option should be also added for the  backup procedure.
