We set the release version manually in the repository via a `RELEASE_VERSION` var in `.env`. This can be automated so that when we tag the repo upstream, it uses the tag as `RELEASE_VERSION`.

Needs to be updated in upstream and midstream. A default of `dev` will be set for all non-tagged builds.
