When building projects in Quay, it seems users have very little control, how the latest tag behaves. It seems the tag is being applied to whatever build was produced last. This doesn't work well with larger projects, like Keycloak, where we would like to point the latest tag to the last stable build.

It's also worth to mention, that Dockerhub gives users full control, how the latest tag behaves. I believe, it would be beneficial to expose such features in Quay as well.
