Document STS access via role instead of relying on access key and secret key

      We introduced a change that now allows us to use roles attached to the service account to access the S3 bucket instead of mentioning the access key and secret key explicitly inside the Quay's config.yaml file. Unfortunately, this is not documented yet even though it was added a while ago.

      Please add the relevant data to the documentation for futhre use. Thanks!
