Fix tests that are broken due to resteasy upgrade

      Upgrading resteasy to <version.org.jboss.resteasy>3.6.1.SP2</version.org.jboss.resteasy> causes the following error in optaweb-employee-rostering tests:
      java.lang.RuntimeException: RESTEASY003940: Unable to instantiate MessageBodyReader
