Check all docinfo.xml files, and update productName to "Red Hat OpenShift Service Mesh" where needed.

This will match the Product Title tile in Pantheon, which will match the updated sync.yaml script for stand alone pages.

At the time this sub-task was created, Line 51 read "Red Hat Service Mesh." There is an OCPBUG to update it to "Red Hat OpenShift Service Mesh" which is the correct product name.

A separate sub-task and corresponding PR will be created for Observability. The PR for that restructure is in flight.
