Update bookinfo images in maistra-2.6

      istio 1.20 uses `1.18.0` images for bookinfo app, however, the app is unstable (see OSSM-6809 ). In the istio 1.22, the `1.19.1` images are used with which the app is more stable.

      Mirror all 1.19.1 bookinfo images into maistra quay (e.g. as quay.io/maistra/examples-bookinfo-ratings-v2:2.6.0) and update the images in the maistra-2.6 bookinfo samples.
