[DOC] Fix minor inconsistency typo

In the Service Mesh Architecture docs, where sidecar proxies are described, multiple (i.e. plural) proxies are mentioned, but then the sentence ends as if the subject was singular:

> Sidecar proxies manage inbound and outbound communication to the workload instance it is attached to.
