Instead of having just a 'stable' channel, we should introduce minor version channels, like '2.4', so that customers can be sure that if they're on this channel they will never receive an update to an operator version that doesn't support 2.4 control planes anymore.

Acceptance Criteria:

• Create 2.3 and 2.4 channels
• Update release documentation to make sure the channels are updated properly whenever we release a new version of the operator
