We should have supported documentation on how to migrate workloads from sidecar mode to ambient mode.

There is fairly extensive developer documentation here: https://github.com/istio-ecosystem/sail-operator/blob/main/docs/migrate-from-sidecar-to-ambient/migration.adoc

We should decide if the above procedure is supportable, and identify any support gaps and work with our doc writers to publish it with the product documentation. If there are gaps, we should address them upstream if possible (though create issues attached to the same epic to track them).
