As an STF administrator, I want to control the version of Prometheus being installed

      Deployments of STF used a static target version of Prometheus (version 2.43.0) as part of the migration from the community Prometheus Operator to Red Hat supported Cluster Observability Operator. Service Telemetry Operator will no longer request a specific version when an administrator defines observabilityStrategy value to use_redhat in the ServiceTelemetry object, which is the default in new deployments. By not specifying the specific Prometheus version to install, STF will rely on the defaults provided by Cluster Observability Operator.

      As an STF administrator, I want to control the version of Prometheus being installed

      Currently the version of Prometheus installed with STF is hard-coded in order to avoid a rollback on migration from community Prometheus Operator to Cluster Observability Operator.

      Determine if this is a value that makes sense to expose as a configurable (and set the default version tested with the STF functional testing environments), or simply remove this and let Cluster Observability Operator manage the preferred installed version.
