Change documented minimum disk size to 500GB

      the current documented minimum disk size of 50 GB does not reflect a good minimum value for a production env. lets change it to 500GB, both in 16.2 and 17.1 docs.

      • Replace <size> with the size of the data volume required for your environment, for example, 50Gi. The minimum size is 50GB.
        • Replace <size> with the size of the data volume required for your environment, for example, 500Gi. The minimum size is 500GB.
