The PoC works, was demoed. Now this PoC needs to be turned into production code with unit tests.

• Finish unfinished demo bit (working from a test-operator v2 CR)
  • needs a catalog that has test-operator v2 and instructions to demo
• Make sure everything that is done in the PoC for API changes to add spec.config is correct, meets OLMv1 standards for changes to manifests, etc
• Add unit tests for new API and functionality
