Summary: The kustomize manifests that are currently defined in the o/platform-operators repository default to the upstream rukpak main branch tag, and specify `controller:latest` for the POM container image. There's available openshift origin images that get mirrored from the internal CI representation of these components.

AC:

• Replace the upstream rukpak and "controller:latest" images in favor of the corresponding openshift origin images
• Update the manifests/image-references file to ensure we're correctly substituting the new default container images
