Description
In order to solve bug 1927478 we settled on a stopgap solution that added another optional field (grpcPodConfig) to the CatalogSource spec.
We need to update the EP to reflect this and focus it on being the next iteration of the CatalogSource spec. Addressing the downsides of having so many optional attributes, and switching to a union type instead.
