as the use of symlinks caused an issue with copy-jdk-configs

We should try and reinstate this, as we really should be tested the JDK as it will be installed, not from the build directory. This is even more important with the single build setup, as a test in the RPM of the unpacked portable will just retest what was done in the portable build itself, while we want to make sure RPM-specific changes are tested.
