[opct][cli] Store product version information in results archive

All version information about the certification tool needs to be stored inside of the results archive (to reduce potential back-and-forth when troubleshooting).

• Plugins container image digest (not just tag)
• CLI version
• Sonobuoy (This is already present)
• Information on if plugin manifests were overridden in CLI
