Description of problem:

The telco-hub ImageSetConfiguration is missing the Cluster Logging Operator component, which is part of the official Telco Hub Reference Design Specification (RDS).

This is particularly important in disconnected environments, where the imageset-config.yaml is used to mirror container images for the hub cluster, a missing component would prevent the users to effectively deploy their telco-hubs as recommended.

Actual results:

The ImageSetConfiguration in telco-hub/install/mirror-registry/imageset-config.yaml does not include the Cluster Logging Operator package specification.

Expected results:

The ImageSetConfiguration should include the Cluster Logging Operator as specified in the official RDS documentation.
