Normal Description of problem:
Currently there is no prerequisite about disabling operator hub catalog sources in both v1 and v2 docs of oc-mirror, so suggestion is to add it in the prerequisite section for both the docs and also in the section about Configuring your cluster to use the resources generated by oc-mirror

Add link to the OLM page that talks about `https://docs.openshift.com/container-platform/4.17/disconnected/using-olm.html#olm-restricted-networks-operatorhub_olm-restricted-networks` in the perquisite section of oc-mirror v1 and v2 docs.
