Cluster Logging - Source CRs are pointing to CLO 6.0 for 4.18 and master

      Description of problem:

          There is been a recent change the Cluster Logging Operator 6.0 was removed from 4.18 catalog and now should ship with CLO 6.1. However, the source crs repository for both 4.18 branch and a master branch points to the CLO 6.0

      Steps to Reproduce:

          1. Check the master branch - https://github.com/openshift-kni/cnf-features-deploy/blob/master/ztp/source-crs/ClusterLogSubscription.yaml
    2. Check the 4.18 branch - https://github.com/openshift-kni/cnf-features-deploy/blob/release-4.18/ztp/source-crs/ClusterLogSubscription.yaml

      Actual results:

            channel: "stable-6.0"

      Expected results:

          Either channel should be set to "stable-6.1" or "stable-6.0" should be made available for OCP 4.18+
