You have set clusterSet disk.enableUUID to true in vSphere.
 
We need to add it in the section https://access.redhat.com/documentation/en-us/assisted_installer_for_openshift_contai[…]or_openshift_container_platform/preparing-to-install-with-ai for hosts that are from vmware type - even if the platform is not vsphere
