Gathering data about specific features shows invalid image names

In our documentation about Gathering data about specific features, there are several images mentioned to use with Must-Gather. Some contain a version (istio-must-gather-rhel8:2.3) but others don't contain a version (ose-local-storage-mustgather-rhel8) and they rely on the automatic version tag ":latest". When using the images without a version number, the download (pull) will fail and the commands provided will not work.

Effective February 2020, Red Hat has removed the ":latest" tag for a number of container image repositories available from the Red Hat image registries and listed in the Red Hat Ecosystem Catalog. Source article 4301321
