Service Monitor should only point to the collector service and not include headless

 OTEL collector custom ports for monitoring

What is the nature and description of the request?

After we create an OTEL Collector instance it creates 3 services, collector,  headless and a monitoring service.

Why does the customer need this? (List the business requirements)

Customer has a requirement for custom ports for monitoring so we modify the OTEL Collector and the service gets reflected. However the collector and headless are monitoring the same endpoints, So there are 2 ServiceMonitors that get created. Customer requires to not have the headless service since that is not really solving any purpose, all the ports are being tracked in the collector service and we can avoid duplicate metrics collection and duplicate ServiceMonitors.
