[Documentation] Must gather image is not updated in downstream docs

Description of problem:

Downstream docs are still pointing to the old must-gather image registry.redhat.io/oadp/oadp-mustgather-rhel8:v1.0 instead of registry.redhat.io/oadp/oadp-mustgather-rhel8:v1.1

Expected results:

Docs should point to the latest must-gather image. registry.redhat.io/oadp/oadp-mustgather-rhel8:v1.1
