Update the channel documentation to read.. 

stable - The stable channel is now deprecated and is not supported

stable-1.0 - is deprecated and is not supported

stable-1.1 - is deprecated and is not supported

Probably a good idea to link to https://access.redhat.com/support/policy/updates/openshift_operators  in this section as well
