Develop general Envoy familiarity such as configuration and debugging

We need to get familiar with Envoy. Create documentation, demos, and scripts that help the team understand how to use and debug Envoy.

This exercise is open-ended and can be accomplished in anyway. E.g. you can try using Envoy directly with Istio Ingress Gateway to get familiar with the configuration and api.

Deliverable: subject matter expertise, documentation and brief demo

Also, a part of this story should be investigating metrics that Envoy has to offer and where those metrics get sent.
