Create v1.x branch from v1.0

      As we changed to rolling stream and to reduce maintenance efforts regarding Konflux, we can rename the branch v1.0 to v1.x. We will maintain v1.0, v1.1 as backup branches while we update v1.x to be the release branch.

      Acceptance criteria:

      • New branch v1.x from v1.0
      • Prow config adjusted to track v1.x
      • Konflux release-data (RPA, RP, DevelopmentStream, ...) update to track branch v1.x.
      • v1.0 should not be tracked in ci (prow and konflux) anymore.
