Support VDDK 8

      Now that we use ubi9 in cold-migrations, virt-v2v can work with VDDK 8

      In order to support VDDK 8, we need to upgrade the ubi8 image for warm migration to RHEL 8.8 on which virt-v2v supports VDDK 8 (https://bugzilla.redhat.com/2143907)

      After we do this, we should update our documentation (replace VDDK 7.0.3.2 with VDDK 8)
