Running bookinfo examples don't work currently. This command will fail

oc apply -n bookinfo -f https://raw.githubusercontent.com/maistra/istio/maistra-2.1/samples/bookinfo/platform/kube/bookinfo.yaml

YAML files need the injection annotation
