Goals

• Add flexibility for users to be able to omit storageclass from the configuration, loki-operator should pick the default.
• Add support so when users update their LokiStack storage class, loki-operator should automatically preform the migration without users having to intervene.
• Update T-Shirt size requests, changing from one size to the other should make the loki-operator provision new PVC and preform the migration.

Motivation

Nowadays loki-operator doesn't provide much assistance when it comes to updates related with PVC/PV. This Epic goal is to change that and introduce some quality of life features to give users a better experience
