Increase default memory limit in collector

    • The default memory limit for the collector has been increased from 1024Mi to 2024Mi. However, users should always adjust their resource limits according to their cluster specifications and needs.

      Description:

      Currently defaults to memory limit of 1024Mi    We have reports of OOM (otlp output to lokistack) with default values.   Bumping this for next release.
      Proposed to increase to 2Gi. 

      Do we also update request.memory?
