Summary

Write an internal filter to map log records to ViaQ v2 data model so that we can allow users to swap from v1 to v2 (or otel)

Acceptance Criteria

• Verify container logs are forwarded to Elasticsearch output using v2 of the schema
• Verify journal logs are forwarded to Elasticsearch output using v2 of the schema
• Verify event logs are forwarded to Elasticsearch output using the v2 of the schema
